Coquito is a Puerto Rican variation on eggnog whose name means “little coconut”. A traditional recipe uses both coconut cream and coconut milk (but no eggs).
To the traditional Coquito, we added an egg custard, and then folded in a dark chocolate ganache.
We finished it with a fair portion of Puerto Rican rum.
We thought we’d top it with a toasted marshmallow (from the fire pit), but it turned out so rich that no topping was needed.
