A tiramisu eggnog by Jack Sweeney

Ingredients

  • Vanilla Eggnog - Sous Vide

  • About 24 ladyfingers (savoiardi)

  • 2 c mascarpone cheese (1 lb)

  • Unsweetened cocoa powder

  • Spike
  • Plantation Original Dark rum

  • Mr Black Coffee Liqueur

  • Dark Chocolate Liqueur

  • Goslings Black Seal rum

  • Van Meer's Stroopwafel Liqueur

  • Equipment
  • Food processor

  • Flour sifter

Directions

  • Make the vanilla eggnog (recipe linked above)
  • Put some of the ladyfingers into the food processor
  • Add some vanilla eggnog and process until ladyfingers are emulsified
  • Add some mascarpone cheese and process until incorporated
  • Fold the food processor contents back into the whole vanilla eggnog batch
  • Repeat, if necessary, adjusting eggnog, ladyfinger, and mascarpone proportions to taste
  • Add spike ingredients to taste (heaviest on rum and coffee liqueur)
  • Store in the refrigerator until ready to serve
  • Shake well before pouring
  • Pour into cups, and sift a light dusting of cocoa powder for garnish
  • Enjoy!

Notes

  • We were experimenting with a "test batch," but it turned out so well that we entered the test batch into the competition (that's why there are no exact measurements for most things).
